Cranberry Apple Baked Oatmeal
This is my go-to breakfast and brunch contribution for family gatherings and a fantastic way to use leftover cranberry sauce (that has been made from scratch). If you don’t have any leftover cranberry sauce, I included a simple and quick recipe below. I’m not a big fan of baked oatmeal, but this one hits different.
Ingredients, Baked Oatmeal
1 and .75 cup milk or non-milk substitute
2 whole large eggs
.5 cup of your favorite Siloam Syrup
.25 cup coconut oil or butter melted (plus more to grease your baking dish)
.25 cup of applesauce or mashed banana (I like to keep single serve apple sauce cups in my baking supplies for this)
3 cups old-fashioned oats
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
.25 teaspoon salt
1 cup cranberry sauce mixture
1 apple chopped
1 cup of nuts for topping (I like pecans the best for this, walnuts are a close second)
Instructions, Baked Oatmeal
Preheat the oven to 350°F
Grease a 9×9 inch or 11×7 inch baking pan
Combine all ingredients in one bowl and mix well
Pour into pan and top with nuts
Bake for 35 min
Let cool for 5 min before eating - can be eaten alone or with yogurt or cottage cheese. Extra can also be frozen.
Ingredients, Cranberry Sauce
1 bag of whole cranberries (frozen or refrigerated)
2 oranges zested and juiced
1 cup of water
.5 - 1 cup of your favorite Siloam Syrup
.5 teaspoon of kosher or sea salt
1 tablespoon of vanilla extract (you can omit this if you use the Not so Vanilla syrup)
Instructions, Cranberry Sauce
In a small pot over medium-high heat add your cranberries, water, and orange juice
Keep stirring until the mixture reaches a boil, then add the syrup, salt and zest and turn the heat down to medium-low and continue stirring every few minutes to keep the mixture from scalding
When the cranberries start to split you can turn the mixture down to simmer and allow to continue cooking for 10-15 minutes
Allow to cool completely before tasting and then add more syrup or salt as desired
